My boyfriend is SO COOL!

Check out this acroyoga move we attempted! SO COOL!

Today I felt like going shopping, so I went and did the best kind of shopping I could think of.

I started adding apple to my tuna salad. I am obsessed.

Also, I find that using tzatziki works just the same as mayo. But I ran out, so today's tuna salad has mayo in it :D

The bread was a splurge. It's from a local bakery which I featured once on here, called Positively Third Street Bakery. I bought a loaf of Golden White. It's so chewy and soft :) it makes me so happy.

This recipe makes a GIANT bowl full. My veggie to tuna ratio is definitely somewhere around 1 to 6.

RECIPE:

3 Pink Lady Apples diced

4 celery stalks diced

1 green bell pepper diced

1 white onion diced

.5 cup of mayo

1 16oz. can of tuna drained

Add salt and pepper if you'd like. I prefer not to.

Well, That's all for now. I highly suggest you try this recipe. I made it the other night for a room full of guests-THEY ALL LOVED IT! :D

Monday Lethargy.

I'm falling asleep at my desk as I attempt to prepare myself for this week's lectures and discussions. Last year at this point I would have opened a can of redbull and would have been zooming through these textbooks by now. But this health kick refuses to pass, and here I am with a green smoothie-hoping it will give me the same kind of love my redbull used to give me.

Today I am lethargic. It's just spinach, lime juice, and apple.

Things that are supposed to be keeping me busy.

UPDATE: How I have been incorporating raw food into my diet, and NEW GLASSES!

As I have stated previously, one my goals this year is to start incorporating more raw fruits and vegetables into my diet. So the following are photos are of what I have been eating lately. Everything has UNCOOKED vegetables in it!

Over winter break I went to Punch Pizza and had a delicious little piece of love called the Mimi. This was my attempt to recreate it. The basil and tomatoes were deliciously fresh, and the mozzarella was a delicate treat! (Although, I am trying to cut out as much diary as I can)

I had carrots and Tzatziki the other night. This carrot had a carrot in carrot!

I finally got my glasses in the mail over the weekend. Together they cost me about $30.

Tuna Salad! This is a great way to incorporate raw vegetables into your diet. Here I have bell pepper, celery, white onion, and jalapeno! (the jalapenos don't count because they're pickled-though they can be beneficial too because of the probiotics (depending on how it was pickled))

An opened faced tuna sandwich, yum.

And similar to the pizza above, a caprese salad. Fresh basil, tomato, and mozzarella drizzled in extra virgin olive oil and a pinch of sea salt. Mmm.

Happy First Day of Spring Semester 2012!

College is starting tomorrow, and in celebration of a new semester here is a post on how I organize for my classes.

Supplies:

Manila folders

Leather folder sleeve

Calendar pad

Pencil Case:

Post it notes, full adhesive

Post it tabs

Card Board Tabs

Paper clips

G2 Pens

In comparison to my pencil case from junior high and high school, this stuff is legit.

Pretty satisfied with my agenda. I purchased mine from Barnes & Noble.

For each folder, I have stapled on to it a calendar so that when I receive my syllabus I can write down deadlines for projects, assignments, tests, and quizzes.
Doing this will help me to visualize what my month will look like.
(The calendar pad is actually a weekly meal planner, but I'm going to fill in the boxes as if it were a monthly calendar)

To keep the shape of my manila folders which are pretty cheap, I put them in a leather sleeve. I purchased this one from Office Max. This is my second semester using this sleeve. I loved it so much I went and bought a backup one.

These guys are new. I have never seen them before now, they are like very durable paper clips with cardboard tabs on them. They're amazing! (Office Max)

Wellness Goals for Spring 2012

This semester when it comes to grocery shopping and packing lunch for long days at work and school-I'm going to meal plan! I hope to save money, save time, and eat healthier in the process of it all. Meal planning is going to be written in my oh so awesome planner.
ACTION STEPS:

Designate an area on the page for each week to write in meals and lists
Find a Youtube/Blogger Raw Foodist that I admire
Start collecting smoothie recipes (Got a new blender, called the BELLA)
Buy a new tumbler for smoothies!

She freezes her bananas instead of adding ice. Nice!

Note: I'm planning on incorporating more raw foods into my personal diet-but I can't give up warm food! No way! Still inspirational ;)

For finals week I invested $23 in a 12 pack case of Red Bull. To my surprise, I'm still working on it! Anyways, I try my best not to depend on caffeine on regular days, but this time of the year caffeinated beverages are a must.
Btw, it looks like I am listening to The Shins. Currently I've been in the mood for happy, sunny music that makes the day feel full of sunshine- when really it hasnt been, Duluth's been dark and gloomy lately.

I want to describe how I am feeling in this exact moment. This week has been a stressful week for me, it seems everything keeps getting pushed back and I continue to disappoint myself. I have realized that I am the root to my own misery.

No one is putting anything on me. I almost feel like I am literally fighting an internal battle and the only thing that seems to soothe it is music in my ears.

When I step outside of my body and watch myself, I find that I have been an ungrateful brat. How can I express such perceptual pain to people who have been through worse? Have I not realized how arrogant I have appeared to my friends? I need to slow down and realize that my worries compared to other's are...well, miniscule.

And then there is this thing that keeps holding me back from something I desire. Doubt. It's funny how things that we are afraid of that might happen-already stop us before we even try anything. How can we fully live in a life in fear of the unknown- we need to stop asking what if and look at what really is.
How can I continue to let the 'what ifs' stop me from going and doing and being..

Sometimes I like to stop and think. Sometimes I need to stop and think. Sometimes the only thing you can do is to stop and think.

College Life Adventures: Love and Men at the Bar

I watched a chick flick for the first time as a singular entity today. It was different. Usually I would sit there feeling good about how I have someone in my life who is already like the main boyfriend character in the storyline-but this time's experience was a different kind of feeling. Before I begin, I must make a note of how it is movies like these that create expectations for relationships-and that what happens on the screen is nowhere near what may happen in life-though of course there are those rare instances. Anyways, I never realized how differently movies are perceived by single people and people who have significant others. When I was not single, watching chick flicks would leave me with a feeling of thankfulness and appreciation for the person who was in my life. Now as a single person, movies like that leave me feeling hungry. Haha. A feeling of hopefulness and excitement, but also a dash of doubt. It's hard to explain. Just thought I'd give a few words on this post.

Everything is different now. There are a lot things that have changed and the position that I play on the field now is still so new to me. Last night's expereince at the bar is a good example. I had a "first time" happen to me (first times forever!) I had my first drink bought by a young man who I never met before, in fact he actually paid for my seven shots I was planning on purchasing for my friends. A few months ago, I never would have been in a situation like this before and I never would have hoped for something like this to happen to me. But it did, and it was so weird- I had no idea of what to say to him after we got our shots. My response was to say thank you and give him my phone number. The funny thing about that is, he didn't even ask for my number. I felt obligated to give it to him, so I just did-and it was extremely awkward... Haha. I suppose I should change my blog name to, College Life Adventures of a Hmong Girl.

Today's topic will be about cherishing the good moments in life. I hate when you meet someone that you really admire-and then things don't work out. But if you look at the same situation with your head tilted a little from a different direction, you can come to realize that it's not shitty and in fact you should keep those memories with you for the rest of your life and stop repressing the good times that you had with someone. Because you are what you have experienced.

I truly believe that everyone that I meet along the way changes a little bit of who I am, and I can have the same affect on them as well. Whether I have a conversation with someone at a bus stop or someone I have known for years, we are influencing each other all of the time. It's really beautiful to come to see how humans are so co-dependent, and interacting with others has been the best kind of inspiration I have found. But it goes both ways. I can be a positive encounter for someone or a negative one. And every time that I choose to interact with people, I hope to always try my best to be a positive influential encounter for someone.

Being alone gives me a lot of time with my thoughts, I dread it most of the time-but I am starting to think that what is happening right now is happening for a reason. And I am happy to hear that everyone is enjoying these blog posts. It's the best kind of way to measure spiritual growth. So, let's see how this goes.

Hmong Girl Talks About Dating

I'm thinking about what I want in a partnership. I never saw myself as a person who had a specific taste or preference when it came to meeting men, but I am starting to think that in order to know what you prefer, you have to have experienced something.
This common theme of relationships and men is new to me. It's interesting that I have found myself in a position of a single woman at the age of 21 (after being in two serious relationships for the past seven years of my life, I thought I would be engaged by now). It's exciting, and lonely, and scary, and fun at the same time.
I haven't really put much thought into dating like this ever before. It never really consumed much of my life, but I'm starting to think that I shouldn't close myself off anymore. Life is really short, and I do want to spend my days with someone who shares the same beliefs about life with me. Someone who I don't have to fight with to be heard, someone who gives credit to my ideas, and someone I can accept for who they are. Something important that I learned from my last relationship is you can't expect someone to change for you- and if you can't accept what your life would be like with them, then it's time to let things go.
It might sound like I am stating a common sense idea, but there is deliberation in my words. And there are young women, like myself, who don't understand that you don't have to settle for something that doesn't fit in with who you are. Because I come from a culture that teaches molding into the man's family and lifestyle, I wasn't blessed with the teachings of equality and the idea of meeting half way. So I can admit that I did and still do struggle with the idea that I have options, and I don't have to marry the first "great" guy I meet. I don't have to be afraid I won't meet another great guy because I am an educated self sufficient person-unlike my foremothers.
It's hard to begin anything with anyone after an identity relationship- you know, the kind where you were practically married. So, my first rule of the game so far has been- no expectations.
That does not mean having low or no standards, it means don't expect the next person to be willing and able to do all the things your last significant other did for you. Just don't expect anything from anyone but yourself. I don't mean to say don't act like you don't need people either, because humans are co-dependent. I mean to say, be a functioning part of your community and find your individual identity first, before defining yourself by who you are with. Because that is exactly the mistake that I made.

It's 2:12PM and I couldn't ask for a better day than today. This morning, my song came on as I was listening to my new Pandora Rachel Yamagata channel. Surprisingly, it was Smile. I've been posting the Nat King Cole version of Smile on some of my friend's Facebook pages for a little sunshine in their lives. It was a perfect three minutes. I sat there smiling to myself like a weirdo. I love bus rides. I love the 15 minutes of just sitting there listening to my thoughts.

I usually dread Wednesdays. On Wednesdays I am at school for nine hours straight. But I have a very good feeling about today :)

I suppose since I am no longer studying abroad anytime soon I can go back to living a more comfortable lifestyle. Beer and shopping.
Today has been an off day. But, I also found that if I just sit at my laptop with no one else around - I can somehow find the self again. Does that sound weird? I am typing like how I speak. Usually I don't do that..I sound better in writing.

Transitioning, that is precisely what I want to write about tonight- while I am listening to a depressing Rachael Yamagata Pandora channel, yes. I love it. This makes me think back to my high school days. Junior year, it was winter and I was taking an introductory art class at an art school that was actually a mansion on Summit Avenue in Saint Paul. I can't remember how long it lasted, but that was the last "transitioning" period I had in my life (pertaining to love and relationships that is). I remember it feeling like someone took everything I ever knew in all of the world, and told me it wasn't true. It was like the color in my vision was ripped from my eyes and everything became black and gray. Everything tasted the same, like nothing. I was in bed for days. I remember my Grandma coming in to check on me- perplexed at what could be happening as I felt like my soul was purging away all of the feelings I couldn't hide from my family and friends anymore. The painful feeling in the pit of my stomach was real, now that I think back on it-it must have been ulcers. If you looked at my pillow cases, you could see the broken heart. Smeared blotches of mascara and snot made it look like someone took a broken leaking pen and stabbed the shit out of it.
So this art class was the first thing I did for myself after my heart break. I signed up for it, payed for it, and took the city bus to it every Saturday for the next couple of weeks. My work was ugly, everything I did was premature. But that wasn't the point of the class. It was me getting up and out and doing- doing something for myself. I can't even remember what I drew or painted or colored. The only thing I can remember is the chill of the winter and the soundtrack of those days. In those days I was listening to Snow Patrol and Damien Rice. There is a deliberate reason for why I avoided music for a long time. Especially old songs that remind me of times I try to repress. Currently I fear listening to songs I actually like during times like these.

About transitioning. I've been thinking about the difference between what happened five years ago and what is happening now. And I think that is all I will write about for now. Good night all.

Tuesday Bluesday

I think I fell off track for a few days. Something happened and it all went away. As much as I try to avoid being alone with my thoughts, I know that it's important to take the time to reflect.

So, here I am with another ambiguous blog. Things at the apartment have been catastrophic. Kee came over the other day to do my week old dishes for me. Last night the girls bought me groceries. And the bedroom is next on the list.

I did get new bed sheets. They're itchy and uncomfortable, I hate them.

I'm skipping management club tonight, and opting for the library.

I used to think that my first love would be my true love, and then someone told me about last loves.

From here we carry on with compassion but without regrets. Life is moving at a faster pace this week-to be honest I cannot wait for this month to be over, long projects really wear me out.

I've had a wonderful weekend full of friends and sleep, I couldn't ask for more. Weekends are the only thing keeping me going nowadays. I wish I could go home to be with Kevin on Halloween, but time and resources do not permit me to.
As for my current emotional state, this morning I am feeling...confined again.

I guess one of the greatest things about having a blog is getting to see how much you have grown in such a small amount of time. I think it's time I do an update on here. Otherwise, when I come back and read through my college days I'm not going to be able to recall the best days here.

Lately I've been feeling thankful. Its the kind of feeling that makes you want to cry because you don't feel like you deserve it. The other day I told myself to stop being surprised when people say yes to me. "Yes, I will join your cause", "Yes, I will donate to support your project", "Yes, I will come and support", "Yes, I will be there for you". I need to stop being surprised that I actually have friends. That's what being in a closed relationship does to you. Thank you God, for giving me the courage to finally be me.

Hi everyone! I'm back :) Today I went to a wonderful local bakery and coffee shop in Duluth at Canal Park. It was called Amazing Grace Cafe. My dear friend Kee and I went out for a Sunday lunch date, and while we were there we encountered a duet of musicians! A pianist and saxophonist. The first song they played I immediately recognized from my Songs of Hope Days, What a Wonderful World.

How is everyone doing? I've got a jam packed semester full of fun fun fun! I hope to fit a blog in here and there. It's just the pictures that are hard to take, I don't like to repost other people's photos unless I know where they are from. But I'm going to try to start taking my camera with me everywhere again, especially now that my foot is starting to heal now.

I'm starting to see the importance of living day by day, and enjoying those who are in my presence. I've been sad about the summer ending because this summer has been the best summer I've had in the longest time. But I realize that this mindset doesn't have to go with the season. And so I just want to stop and blog about this thought, so if I ever forget I can come back to it.

Brain Storming: My Home Office

I still have a lot of things I am working on slowly getting rid of, but the sofa was a big change. I am hoping to turn my living room into a study space and if I have room maybe create a yoga corner. But, I am currently immobile at the moment-due to my newly sprained ankle, but I am still very determined to reorganize my space for the new school year.

This year is going to be a little different for me. My goal this semester is to not hurt my GPA in any way possible, with all of my might. Other goals I have are to spend less and be active more. I hope to discover all the corners of Duluth before I leave this place, which means I've got a lot more discovering to do.

I'm running out of time tonight, but I 've got so much more to talk about next time! Like down sizing and hosting a clothing swap party!

Shopping Results, Back to College

I decided to invest in a few much needed pieces for my wardrobe, two pairs of pants, two blouses, and a reliable blazer. I didn't find everything I was looking for, but I think this is a very good start.
I might try thrifting for some button downs.
I saw a really really nice rose gold watch at New York and Company, but I wasn't willing to spare $22 bucks for a watch that might stop running or fall a part the same day that I purchase it. (Sigh) But I am still thinking about it now, which might mean I may have to go back for it.

These are just the clothes that I purchased today, the shoes are from a year ago. They're my most comfortable booties ever! The Brand is Born, I bought them from DSW.

Back to School Clothes, Shopping List

Ah, it's that time of year where everyone wants to look nice on the first few days of school. I'm making a small list of some basic essentials I plan to look for at the mall tomorrow. I'm pretty sure if I have some sort of plan, I am less likely to spend as much.

1. A pair of comfortable booties that go with anything, maybe wedges with rubber soles
2. Light brown pleather jacket
3. Warm, red, flowy, scarf
4. Button down denim shirt
5. Simple, clean, black interview blazer
6. Fitted baby blue button down
7. Brown leather belt
8. Black or tan dress pants
9. The perfect over sized rose gold watch
10.Military jacket

Looking through my list of essentials, I realize I could probably thrift a lot of these items. Hopefully I can stop by our local thrift store tomorrow, or even better...Buffalo Exchange! I am pretty sure I won't be able to get everything on my list here, but I'll work with what I find.

I can't believe I did it! I went in with one goal, and that was to finish.But I ended up finishing in 37 minutes!

I could feel my heart beating outside of my body, and the adrenaline at the top of my stomach. I wish I had my camera on me while I was running to show you the hundreds of people who ran with me, and the free pizza, beer, muscle milk, and bananas we got! We started at Saint Anthony main and ran a big rectangle, turning left twice to get back to the starting line where we finished. We also ran across the Stone Arch Bridge , an awesome spot in Minneapolis.

We don't know any of these people, but here's a snap of the runners one the Stone Arch Bridge as the sun was starting to set. Look at that gorgeous Minneapolis in the back.

I encourage everyone to do this at least once your life. It's something you cannot skip out on.

Also, I've been having a lot of "first times" this summer, and I've been loving it! I say go out and find something you've always wanted to do and do it. It feels amazing! I hope it never ends..First times forever!!!

Food Journal and My 1st 5K

Today I am running my first 5k ever in my life. Its the Torchlight 5k. I have no idea what I have gotten myself into. To be honest I haven't trained much for this, I've only been walking all summer. My only goal is to finish. We'll see what happens, all I know is I'm going to try my best!

I am also starting a new thing called a Food Log. It's a journal of every single thing that I eat. The goal of the project is learn to be more conscious of what I am putting into my body. So far it's been pretty fun, since I LOVE taking pictures of food! It's nice looking through all of the pictures at the end of the day or even the end of the week. Just think about what you ate yesterday, it's hard to remember right? That's what I mean when I talk about being more conscious of what we put in our bodies.

There is something about being home that makes me feel like a kid again. I love having an 11 year old brother, probably the best excuse for playing Yu-Gi-Oh cards and wearing sillly bands! Now that my summer classes are over and I am not working until school starts again, I've just been watching cartoons and chilling with Kevin all day! Which reminds me, I have to post my favorite monster card on FB soon! I'm starting to feel a little bit excited for school, though this year is going to be a real tough one for me. The Last Days of Duluth Summer

I love this city in the summer time. I never want to leave it. And yet fall semester is starting in three weeks and I am starting to have this "I can't wait to get the hell out of this place" sort of feeling in the very back of my mind. School feels like forever, but it's such a safe place at the same time. My recent goal was to mentally prepare myself for this fourth year of college, at this very moment I don't feel so prepared. In fact, I am feeling a tad bit overwhelmed.

Work has actually been really great. Everyday I find myself applying concepts to situations at work that I have learned about in the classroom. It makes me feel super excited to get out into the real world. Sort of. I've been reading job descriptions here and there for companies that I admire. The combination of working in retail and reading these corporate office openings has helped me realize a potential professional passion. Retail training. I realize that because I am such a direct and literal person I have a good knack at giving directions, teaching, and just providing guidance. Training others in at work has been very fulfilling for me. Anywhere I go, I find myself drawn to the new comers. For example working with new immigrants, incoming freshmen, customers, and trainees. I actually enjoy giving advice, proper information, and directions, I think it's just natural for me. Maybe I should have gone to school to be a teacher.

Anyways, I've been thinking a lot about my future. I have no idea what I'll be going into at this point. I have a lot dreams, but I'm just not sure how to do it. Or even if it'll happen. I need to start networking.

Well that's enough rambling for me. I've snapped some awesome pictures of Duluth. The days here have been very pleasant. I just want to share it with you all!

Summer Adventure: Chester Bowl, and New Shoes

We've been doing a lot of walking lately. Well, a lot for what we normally would do. My actual goal was to start running, but it's hard to run with friends when I'm still a beginner. I find that walking at a quick pace is much more enjoyable with good company. Recently we did a hike at Chester Bowl, another hidden jem of Duluth. It's a cool creek with a few falls and nicely shaded trails.

I finally brought home some weights from my mom's house. I'm thinking about doing some strength training to go along with my evening power walks.

I strive to walk everyday, but some days I feel like there is no time for it. But the funny part about it is that when I do go for a quick stroll it can be just as little as 30 minutes only. Having a buddy helps. Making plans with someone else makes me more likely to follow through with something because I have made that commitment to my friend. The hard part is when the both of you flake out, haha. But we try :) It's supposed to be fun, not torturous anyways.

I used to have the BEST pair of running shoes ever. They were the Nike Bowerman Series, so extremely comfortable. We tried looking for them at the mall today and didn't find any. But I did find these babies, I'm hoping they'll be just as satisfying. These are Nike Air Retaliate.

These here we picked up for Richard for only $28! Using a coupon at DSW and purchasing a clearance item brought it down to a third of the original price. Good stuff.

A Very Eventful Monday, Knight and Dragon Pizza

This past weekend Kevin and I made home made pizza! I told him to get creative with the toppings, so he made a picture! Its a knight and a dragon. The Knight was the most delicious, I think my new favorite pizza is cheese and white onion!

Seven Things, Mermaid at the Lake

It makes me sad to think that it's now August. Summer is going by quickly. I haven't been out to the beach in a week or two. But today's blog is about getting wet on the Lakewalk. If you know Duluth, you know the Lakewalk has got awesome rocks and formations to hang out around. Yesterday we walked up the Lakewalk searching for a good spot to dip in the water. Here's what we found.

Seven Things, and Captain America!

This month was my little bro's birthday!

I went to Church Camp for the first time!

Now that I am back from camp I've got a lot of objectives to finish before the summer ends. Right now I'm just working and figuring out my next steps in life, maybe updating my resume and looking for internships. If anyone knows of any, lmk! I'd really appreciate it.

People and Places that Inspire Me: Carifest 2011

My friend Kee invited my sister and I to accompany her to a Caribbean Festival that was happening in Minneapolis last weekend. It was our first time, and we knew absolutely no one. But it turned out to be pretty neat. We also went to a local Somali Mall called Karmel Mall to get henna done. As you can see, it turned out great! I've been so proud to rock mine all week :)

This drink was delicious! Tasted like grapefruit. Reminded me of Fresca.

I was super amazed by this oven made out of a barrel, it was powered by a car battery! So cool!

I Spent $0.76 at Walgreens

This week Walgreens has some awesome awesome deals!

Using coupons from today's newspaper and my $6 in register rewards from last week I was able to purchase all 14 of these items for $5.76-and it gets better-I received $5 in register rewards at the end of the night. So, technically you could really say I only spent $0.76!

For Duluthians, and or anybody who lives in a small town outside of the twin cities area,

I find that purchasing the StarTribune would benefit you more than the Duluth Tribune, because sometimes the DuluthTribune can have some really bogus coupons compared to the StarTribune.

**I purchase my newspapers from my local Super America, all Sunday newspapers there are only .99. Don't purchase your newspapers from Superone, unless you want to pay $1 more for it.

I want to refer to some of my favorite blogs for couponing. These women are amazing at what they do, and I have been using their coupon match ups every week this month. They also make Youtube videos that have been very helpful in my understanding of the coupon world.

COUPONING: FREE STUFF using coupons at Rainbow Foods

This is my brother's new hat and button collection. Pretty neat eh? I am currently working on a blog featuring Minnesota's Spring Comic Convention that happened a few weeks ago. I've got some really great photos to share :)

But for now, let's talk FREE STUFF!

For those of you living in the twin cities area, there's something really important for you to know!

Rainbow Foods doubles coupons!

On Wednesdays they are willing to double up to five manufacturer's coupons, under $1, and when you spend $25 (pre-coupon total). And on Saturday's they double 10 mfg coupons!

So while I was in town, I tried it out-and man did I find some deals!

I will start with the free stuff.

Things I got for free:

7 bottles of Ranch ($1.99)
7 Zone Perfect bars ($1)

This is where I will explain the doubling. For the ranch, I had a $1 off coupon that doubled to $2, making them free! And for the Zone bars I had $0.55 off that doubled to $1.10 making them also free!

The Glad sandwich bags were for my mom, I was able to get them down to $0.45 a box. The Cheese was $0.50 a bag, Tabasco $0.28, the lysol was $0.49 and the Bocca Burgers were around $5 for all four boxes.

I can't remember all of the prices exactly, but I ended up spending a total of $12 for everything. I had to make two separate transactions to get 20 MFG coupons doubled. My Rainbow Foods allows us to make multiple transactions :) So, it's pretty awesome!

Food Adventures: Kincaid's and Dong Yang, American and Korean Cuisine

Hi everyone! It's great to be back, while I was away I snapped a bunch of photos for the blog! Today I have two new restaurants to share with you, both are located in the twin cities area :)

Kincaid's is located in downtown Saint Paul, it was a place my date randomly chose for a special occasion. It was definitely a fancy feast! The photo above is what I ordered for an appetizer, crusted brie with macadamia nuts and apple slices on a sweet honey strawberry jam. It was delicious! My favorite!

Dong Yang is actually an Asian market with a little sit in /takeout restaurant in the back . I was so amazed of this place! This was the first most awesome Korean market in Minnesota I have seen!

Coupon Loot: FREE Nexcare Bandaids and $0.68 Meals!

I have to say, it's been difficult trying to coupon shop at Walgreens. But I am slowly learning. Every store has different coupon policies, and Walgreens is quite tricky -but well worth it because of something called a "register reward". If you're interested in learning how to really do it like a pro, I suggest you check out this youtube video-where the Coupon Divas really go into depth about it.

Sale Price for Razor gift set was $9.89, I had a $4 coupon off, and there was a $5 Register reward that I received after the purchase.

9.89 - 4 - 5 = .89

That's $0.89 for this item!

Register Rewards are basically like in-store gift cards. So, in order to get my actual $5 in cash back, I made another transaction on Band aids that were basically free after a Mail in Rebate. They were $2.99 each, and I bought two.

$2.99(2) = $5.98 (Which I'll just get back in the mail)

So really, I spent about $2 for one razor gift set and 2 boxes of band aids.

BUT,

I had more coupons-so I doubled it. Meaning I payed $4 for 2 razor gift sets and 4 boxes of band aids. Keep in mind, the numbers are a bit off just to keep it simple-there is tax involved.

Quite honestly, I don't need men's razor gift sets or band aids at the moment, but they were a good deal! When I do need, I'll have them! And I'll have bought them for less than a dollar each!

As you can see here, I cut out the UPCs and sent them out already.

Walmart

These guys were pretty cheap too, so I couldn't resist.

I ended up paying $0.08 for each Taco Seasoning and $0.68 for each Hormel Kids microwave meal.

Good stuff eh?

Well, that's all I've got for now-just trying out this new hobby. It's pretty fun stuff! But my real goal is to just GET STUFF FOR FREE.

Spring in Duluth, Endorphins and Aerobic Exercise

I usually take the city bus to and from school everyday, but today I was feeling a bit moody- and out of shape, so I decided to try walking to school. They say good exercise releases endorphins and that most Minnesotans lack vitamin D. After a little aerobic exercise and an hour in the sun-

I have to say it worked! I feel good and accomplished!

I almost got lost, well sort of. I just went down a block that had a dead end, but then I found a tiny cemented trail that lead to another street :)

Positively Third Street Bakery, they're a pretty awesome locally owned bakery. I was tempted to go in today-but I'm on a "full price" band-which means I can't buy anything at full price, though this bakery does have good deals on Sundays I heard!

The No Cook Cook: Bacon Quesadilla

THE NO COOK COOK Series!

I'm starting a new series of recipes and calling it "The No Cook Cook", I'm going to be featuring really easily made dishes that are affordable and quick. If you guys have any ideas, let me know-for now I'll be on the look out for more :)

Today's recipe was inspired by my trip to Chili's with my sisters last week. It was my first time and I was uncertain about the menu items so I played it safe and got their bacon quesadilla. It ended up being the best out of all the orders that night. So here is a little version I made, it only requires three basic ingredients.

1. Tortillas

2. Cheese

3. Bacon bits

The cheese doesn't even need to be shredded, I just happened to have shredded sharp cheddar. But the bacon bits make a huge difference! You don't need much, just a little bit changes the whole flavor :)

Cover it up, and microwave it until the cheese is melted to your liking.

And here it is! You can easily pack this for lunch too ;)

And it's perfect dorm food, for those with out a kitchen.

IMPORTANT: The dip!

I have two, ranch dressing and sour cream! For me personally this is a must-but my little brother doesn't seem to care for it much.

Pantry Love: I've got a treat for Yu!

I was over at my friend Yu's apartment the other day having some delicious noodles :) and I noticed how cute and neat her pantry was. I love kitchen tours! My favorite are fridge tours, but Yui's pantry was so cute! I had to snap a picture of it for the blog. I've got to do a kitchen tour of my own for the blog soon too! Perhaps later today if everything works out for me.
This week is the last week before our final examinations, I've got a total of 4 next week-but I'm not afraid! (Just kidding) I hope to make it a relaxing week, everyone is always so stressed out during finals-I really don't think the stressing helps. So this is usually the time of the semester where I paint my nails, take long hot showers, enjoy a mud mask, and do a little painting or creating! And of course, blogging!

Hobby: Coupon Haul, 11 cent Oral B Toothbrushes and FREE Mr. Clean Magic Erasers

Hello everyone, so I have decided to continue this new hobby with a couple of good friends. I've got a few good shots of their haul to show you as well :) The above photo is of the purchases I made.

We went to three different stores, Ulta, Target, and Walmart.

At Ulta, I bought a L'oreal True Match Blush for $1.61, which retails for $9.99.

At Target I bought one Mr. Clean Magic eraser for $.69 and four Old Spice body washes for $1 each.

At Walmart, I found an even better deal on the Magic Erasers, I was able to get two for free! (I would have got more, but I ran out of coupons) I also purchased a Tide Stain Release for $3, which retails for $7.

Now I know it sounds a bit confusing, so I photographed some coupons before I used them.Though I did not photograph all of the ones I used.

I combined both of these coupons to get a total of $4 off my $7 Tide Stain Release purchase.

And combining these two gave me $2 off a $1.97 duo pack of Magic Erasers. FREE!

And MORE FREE STUFF.

I also bought these on a separate trip to Walmart, these are Oral B Cavity Defense toothbrushes which retail for $1.50 at Walmart right now, I had a $1.50 off coupon..so all I had to pay was the tax. Pretty neat eh?

I'm really only a beginner at this stuff, but so far I have been able to get a few good deals-especially at Ulta and Walmart.
Most of the coupons I have used were from the Sunday news paper, some were printed, and a couple from magazines.

There are people who are so extremely good at this that they just do it as volunteer for a shelter or for people in need. I hope one day I can be just as good :)

I've got an AMAZING video for you guys. It's of someone who is a pro at this sport :) Just a couple minutes-and it'll wow you!

Hobby: EXTREME COUPONING

There is this show on TLC called,"Extreme Couponing" that my friend introduced me to.

People were claiming that they could buy food and toiletry items for pennies, and more intriguingly that they could get the store to pay them to take the stuff out of the store. I didn't think it could be possible,..until today.

This morning I bought 4 Sunday news papers and mass clipped and stapled them in less than 20 minutes. I found a few usables and stacked them on top of each other using a total of 4 in each transaction, along with a buy two get one free deal. I came out with $30.00 worth of makeup for $4.00.

Actually the first transaction totaled $4.19 and the second totaled -$0.02.

That means I GOT THE STORE TO PAY ME!

P.S. I also had a birthday coupon for a free drink from Starbucks, which I decided to use today just to add on to the excitement.

Recipe: Musubi Thursday

This week I am finishing up the last of my projects and starting to prepare for final examinations which are about one week from now.

It's been hard for me to get back into study mode, as I have been driving back home for the weekend for the past two weeks now. But I plan to create a study schedule tomorrow for the rough road ahead-which I may or may not post on here. I hope everyone else is having a great time with this change of weather, it may not be the best..but it's finally transitioning! (Though it actually snowed here in Duluth yesterday-I'm not too upset about it though, I would rather have bad weather during finals anyways)

On Monday I stopped by the mall to pick up some goodies :)

RECIPE:

MUSUBI!

My friend Kee introduced to me this stuff. It's a Hawaiian dish! I looked up different recipes online, but they all required so many ingredients-and in this hectic week of school, I would much rather stick with the simple-so I stuck with what Kee told me.

This recipe was just enough for one serving :)

Ingredients:

Nori

Spam Singles packet

1 cup steamed Rice

Plum Sauce

1 tsp Rice Vinegar

You can also use plain vinegar as well.

1. Brown a singles packet of spam in a pan.

2. Mix about one tsp of rice vinegar into 1 cup rice.

3. Spread about 2 tbsp of rice onto half a sheet of nori.

4. Cut a slice of spam and placed it in the roll.

5. Spread a little plum sauce on top of the spam.

6. And then rolled it all up like sushi.

It was delicious. I found that I like a lot of plum sauce and not so much rice.

TIP:

I couldn't find my real sushi roller so I used a place mat instead. I covered it with cling wrap just like how they do it in the restaurants-because the place mat has orange dye on it, and also to avoid extra cleaning.

Haul: Korean Skin Care, BB Cream

For those of you who are familiar with Hmong Village in Saint Paul, there is a booth in the flea market area that sells Korean Cosmetics that I just discovered today. Right now the name of the kiosk is "PINK APPLE", the booth number is 251. The owner of the little shop actually goes to Korea about once a year to buy her products, she was very knowledgeable and passionate about her products! Go visit Kouee if you want to try out some of the products in person and get some answers to your questions about Asian cosmetics.

I myself have been interested in this new BB Cream product that has been a hot item in Asia for the past couple of years. I was actually looking in to buying a few BB Creams online, but this is the very first time I have seen a Hmong vendor in the twin cities area that sells BB Creams.

There are different brands that sell BB Creams, the brand I chose today is MISSHA.

Kouee's shop carries a variety of BB Creams, skin care products, cute Korean jewelry, clothing, beauty tools, cell phone charms, and other little Asian gifts.

I hope to stop by there again and get a few pictures of the shop for you guys soon.

Life Skills: Stories

There is one thing I like to take my time with and that is listening to stories. I do love to tell stories to people who love to listen, but the kind of stories I am talking about are not fairy tales.

A lot of who I am is rooted in the stories of my people and my parents. Most of my motivation is derived not only from my experiences growing up, but also the stories I carry inside me- precious lines of words that bear so much meaning and evoke a collection of emotions within me. These stories describe a journey to this country and a long struggle to sustain a family. And these stories are sad and happy, but most of all they are me.

The point of today's post is this: Every person has a story, don't let your story be an excuse and let it be your reason.
The whole intent to my blog is to share. I think sharing ideas and sharing knowledge is the best way to fix a world like this... There is so much that is unknown, or unapparent until pointed out, and so here is a diagram of an ideal life span for me-and perhaps you or someone you know could make some use of it too.

Mapping out your life might seem a bit odd to some people. But I think if life is meaningful- we should at least have an idea of what our purpose in this world is.Though the map has no explanation of meaning to my life, it gives me an idea of what I want to do with it.

It doesn't matter where you may be in you life, mapping out the next couple years of your life could help you realize a lot of things. Maybe you want to continue your education, or start a career, or start a family, perhaps start your own business. Maybe you really have no idea, but maybe you have an ultimate goal of just surviving in this economy and taking good care of your aging parents. Who knows, envisioning your life in the next couple of years can really change a person's perspective towards everything.

I had a conversation about not having the same opportunities as everyone else the other day. And sometimes I can agree with that. Some people are blessed to have mentors, investors, motivators, educated parents, older siblings who have experience, money, cars, and maybe free education. But I don't think having a lack of certain resources should be enough reason to not- don't allow it to be an excuse. This comes back to my belief about sharing. Sharing is caring! And I cannot stress that enough. If we all stopped hiding our secret recipes to life from each other-maybe this would be a better place. Be a doll and start sharing your knowledge!

Food Diary: Pad Thai hype continued.

If you haven't already, you'll soon learn about my habitual phases I tend to go through. This months obsession is Pad Thai.

When I learn a new recipe I usually try more than one- I try different versions of it, this type of cooking exorcise helps me learn more about specific ingredients that are necessary for the dish. Comparing recipes helps you eliminate unnecessary ingredients which can help you save a few good bucks too.

Once I've mastered the basics, that's when I try my own versions.

This time I've added asparagus.

I finally got a hold of Pad Thai noodles, so now I don't have to resort to my "makeshift" recipe that uses ramen instant noodles. These noodles were featured in my Asian Grocery Haul blog post.

If you don't have access to Pad Thai noodles, try my Makeshift Pad Thai Recipe.

The noodles have to be soaked in water for a few minutes.

I don't have any pictures of the Pad Thai sauce, but here's a video of it.

Start your Pad Thai like a stir fry-garlic, onion, vegetables, and last shrimp.

Add in the noodles (drained), a little siriacha, and the Pad Thai sauce (video shows you how) and you're done!

I discovered this brand two years ago and I went crazy over it. I was hoarding soaps, shampoos, bath bombs, lotions, practically the whole store. And then I gave it up-because it was ruining me. Now I am back, attempting to keep it under control.

The only essential item I really really need is the facial cleanser,

"Angels on Bare Skin".

This product is amazing, and I always find myself going back to it in times of pimples and dry skin.

Food Diary: Happy Egg Sandwich

Ingredients:

Ham deli meat

Chopped white onion

Mayo

2 eggs

2 slices of pepper jack cheese

Cheese and Egg Process:

I slow cook the eggs on medium low heat in order to have a fine layer of melted cheese. Just rip the cheese into strips and evenly lay it on top of the eggs right away in a pan. Make sure you butter the pan before hand. Then after the bottom half is cooked, flip, the cheese doesn't burn if you have it on medium low heat.

And then put it all together and you have a HAPPY EGG SANDWICH.

Food Diary: Hmong Food, "RICE IN WATER"

There can sometimes be a little confusion when it comes to Hmong food.

Hmong people were once thought to be a nomadic type of people, that I don't know for sure. But there is one thing that is certain, and that is that Hmong are adaptive. What I mean by that is- everywhere we go, we pick up a few things and they influence pieces of our culture. In fact, you could really say that about any group of people.

My point, Hmong people make eggrolls which are not the same as Chinese eggrolls but influenced by the Chinese, we make spring rolls, steamrolls, pho, curry, soups, salads, and so on..and a lot of the time-these dishes are inspired by neighboring countries, or even literal neighbors.

BUT, there are still some dishes that we can still call authentic Hmong food. Such as boiled chicken (the kind post pregnant Hmong women eat) and boiled vegetable soup. (This is an opinion fyi, and a topic very much discussed in my own family's household)

Anyways, today's food diary features a home made dipping sauce and broiled sausage eaten with rice in water.

Here is the dipping sauce:

Ingredients:

Thai chili pepper

Garlic

Honey

Fish Sauce

Lemon

The heat can be adjusted and even eliminated, as well as the garlic. But everything else is essential for a good dipping sauce.

NOTE: Among Hmong people it is not called a "dipping sauce" most of the time it is referred to as a "pepper". There are millions of Hmong pepper recipes out there, they can be chunky, watery, creamy. and even solid. Depends on the maker :)

The best way to describe a pepper is to think of it like a salsa.

RICE IN WATER

It's not difficult to explain at all, it's just steamed white rice in cold water. Comfort food for me.

And then you just eat it like this! Delicious!

Nude Lipsticks

I'm feeling quite happy as I am working on this post.

In response to one of my first few requests, here is my collection of nude lip sticks and a few thoughts on the trend.

To be quite honest, most of these colors are ridiculously close to my natural lip color. But there is something that happens when I pull out a tube of lipstick to put on, I get this feeling....... Evidently it's from a whole line of social influence that has captured me, and convinced me that somehow if I color my lips I may look better.

But I like it. And I acknowledge all implications of the cosmetic world.

I've learned a lot about consumer behavior this semester, and I could continue by explaining how purchasing lipstick effects my psyche-but I think it would ruin the purpose of this post.

My first point of advice is, if you're just getting into nudes and you'd like to try it out, try a lip gloss. They're much easier than lipsticks and a great way to hide dry lips.

This is a current favorite of mine.

It is a MAC Lipglass and the color is called Emancipation

(It's from their Wonder Woman collection, just FYI)

Second Point of Advice.

The brands ESSENCE and NYX sell lipsticks as low as $3.

They are sold at ULTA, and that's all I know for sure.

-I believe MAX FACTOR isn't around anymore because I bought the ones I own now on sale because they were on super clearance at my local Cub Foods.

Third Point of Advice.

Do not purchase cosemetics for full price at a grocery store.

But, DO look for sales there-because they can have REALLY GOOD DEALS, better than Walmart or Target-because no one really buys cosemtics from grocery stores and that's why they go on sale :)

Fourth Point of Advice.

Walgreens cosmetics (and other items too) are overpriced.

I always try to avoid buying anything from there.

For example:

Cetaphil facial wash at Walgreens is almost $2 more than at Target for the exact same product.

One more thing about Walgreens.

BUT, Walgreens has a satisfaction guarantee policy that could potentially allow you to return any unwanted item even if it is opened.

These are a few points of advice I thought I could share, I don't know anything about color matching lipsticks to skin tones-but what I do is try not to spend too much on something if I am not totally sure. And of course, to really find the perfect color for you-the best thing to do is to go to a makeup counter and try on shades with a sales associate.

Food Adventures: Asian Grocery Haul

I conducted another photo shoot in my kitchen today. In fact, I didn’t put my groceries away just because I wanted to take pictures of my pretty and delicious Asian ingredients.

The place I went to is a locally owned Hmong grocery store called Golden Harvest, they sell a variety of Asian and American foods, and they're located on the East side of Saint Paul right off of Maryland Avenue.

Whenever I buy ground pork I go to Golden Harvest. Here in Duluth, the ground pork isn't as fatty and full of goodness! Hehe, but this place is THE place to get a good chunk for a good price!

METHOD: Portioning Meat

This is something my Grandma used to do whenever she would buy ground pork. I think it's a great way to make thawing easier and it' great to portion out meat consumption.

I used little snack sized baggies, they're the perfect size and affordable.

Mine are from the dollar store, 50 for $1.

I LOVE shitake mushrooms, they are amazing!

The store ran out of fresh ones, so I went for the dried ones that you can soak in water to revive them from their sleep. This is my first time buying the dried mushrooms.

More dried mushrooms, these are called "Dried Black Fungus". First time buying as well.

Heavenly noodles for Pad Thai! I made some today, which I will feature in another post.

I grew up seeing this in my Mom's kitchen, I have no idea how to really use it. I assume it's just like corn starch. I bought it for a project I am still cooking up!

More secret project ingredients. Potato starch, same thing, but I have no idea.

This stuff is GOOD! Just add water and it makes steamed rice roll wrappers. (Vietnamese dish, Banh Cuon)

And another one of my ingredients I bought for my up-coming project.

I've been on this Pad Thai hype.

I've been trying out different versions and stuff here and there. This is the KEY INGREDIENT and my second bottle.

Nose Piercing: Aurora Borealis

My sister and I decided to get twin piercings.

This idea actually came from a conversation I had with some friends about piercings and tattoos. I had sort of walked in on a conversation about it, and then sort of suggested I wanted one, and then kind of planned on thinking about it some more, and then I mentioned it to my sister, and then she and I decided we would do it together. So here we are after it all.

While I was watching my sister get it done first, I started to feel panicky so I actually had to go and sit down across the room and not watch her get her's pierced.

The photos were taken by my other sister Victoria, who happens to be in this really neat band called VENUS ON FIRE

I will be doing a post on them soon.

Now the rest is up to me to take good care of my healing hole in my nose.

It's quite a meticulous process, but we'll manage.

It's actually quite subtle, and perfect.

What's pretty neat is we got the same colored stone for our nose rings. The name of it is Aurora Borealis, which is pretty cool because it's a multi colored prism like reflecting gem :)

The place we went to get it done at was in my home town, Saint Paul.
